Is Puri healthier than paratha?

In his ever-popular Rude Food column in HT Brunch last Sunday, Fear of Frying, Vir Sanghvi wrote that the deep-fried poori is healthier than the shallow-fried paratha. His reasoning: a poori is not immersed in oil, but floats on the surface. As soon as it’s done on one side, you quickly turn it over, so it absorbs less oil than French fries do in a deep fat fryer.

  1. Unlike the paratha, which may be shallow-fried but stays in the tawa long enough to suck in “up to 700% more fat than a poori”.
  2. The source? ITC chef Manjit Gill, whom he also quotes as saying: take a roadside paratha and a home-made poori and squeeze them both.
  3. You’ll get more oil out of the paratha.
  4. Emphasis mine.) I didn’t, when I tried that with kitchen-paper rolls.

The pooris left out much more oil on the paper than parathas did. Anyway, why would you compare a roadside paratha with a home-made poori? Though I’ve had some pretty dry roadside parathas, made in tandoors, where I’ve had to add butter (which I don’t usually do).

But forget that. Let’s get to the central premise: “A poori is cooked on the surface. You put it intohot oil and you do not need to let it go all the way in. It simply floats on the surface.” Not quite. Yes, it floats because of the (steam) bubbles that form below, but here’s the thing. Not only is the lower surface of the puri fully into the oil, but cooks push the puri deeper into the oil – and then turn it around to push the other surface in.

Make no mistake: the puri is soaked through with heated oil. Don’t take my word for it: just watch puri being made, or the Bengali luchi, or even a street-vendor’s puri in a shallow pan. Even outside India, there’s a special effort to ensure that the puri slides fully into the oil.

It is possible that have absorbed more fat (upto 700% more) than a poori.” Anything’s possible, but it’s very unlikely. Parathas cooked at home (and in most shops) are made with light dabs of butter or fat – for the simple reason that they don’t need lots of fat. Even dhaba parathas are too dry for some—and so, the dhabas give you fat dollops of butter, preferably white, on the side.

If you’re worried about the fat, pass on the butter. And therein lies the better argument for unhealthy parathas—the extra butter. But there’s one overwhelming reason puris can be unhealthy, in the shop or at home. And that’s the heated oil. Parathas get a fresh bit of oil or fat for each new one that’s fried.

  1. Not so the puri.
  2. If you’re lucky, the whole batch is in one load of oil.
  3. If you’re not, that oil has been reused.
  4. The oil for the puri is usually overheated—crossing its smokepoint.
  5. Those fumes you see are smoke fumes, usually with acreolin, which makes your eyes burn.
  6. The oil deteriorates within that puri session.

It forms HNE and other carcinogenic substances which aren’t very nice to consume. In a shop, that oil stays on the fire for many hours, really building up the bad stuff. In the shops (and even in homes) the puri oil often reused, by which time its smokepoint has lowered further due to contamination, and there’s more HNE and other contaminants in it, so it becomes a vicious cycle.

Reusing that oil is not a good idea, As a true-blue Bong, I enjoy my luchis, but with no delusions about their being healthy. With a paratha, though, I do have the option of a healthier version—nearly dry, with just dabs of olive oil. Or, where I can get it, a tandoori paratha, With just a hint of white butter on the side.

Is puri healthier than Bhatura?

Calorie watch: Chole bhature vs Puri bhaji A sizzling plate of chhole bhature or piping hot puris teamed with mouthwatering bhaji – just the thought is enough to get your taste buds salivating. Not only are these two dishes all-time favourites with all age groups, they are also extremely vesatile.

  1. You can serve them for breakfast, lunch or dinner, as a snack or at parties or festivals.
  2. You can order them at a five star hotel or at your favourite down-the-road eatery.
  3. These two dishes have yet another thing in common – they are both deep-fried and, hence, loaded with calories.
  4. However, if you are making them at home, here are a few suggestions you might want to keep in mind.

Get Ahead fitness expert Samreedhi Sharma compares the calorie count of these two popular dishes and suggests ways to enjoy them without the excess fat.

  • Chhole bhature
  • 450 calories (17.5 grams fat) = Mopping floors for 91 minutes
  • Though the calorie content for chhole bhature and puri bhaji is almost the same, the difference lies mainly in their fat content.

Pulses ( chhole ) can be a good source of protein if combined with wheat or rice. Being a complex carbohydrate, it is a good source of fibre too; in fact, eating just one serving can be quite filling. The source of high fat in this recipe is the fried bhatura,

  1. Puri (4 pieces) bhaji (potato-based)
  2. 450 calories (20 grams fat) = Mopping floors for 91 minutes
  3. The overall value of this food differs from chhole bhature when it comes to the fat content, which in this case is higher by a few grams.
  4. Nutrition-wise too, chhole is a better choice, as it provides protein and fibre, both of which are lacking in potatoes.
  5. What’s more, potatoes do not have the satiety value of chhole – you may end up taking more than one serving and still not feel full enough.

Health tips

  • Before frying puris, heat the oil well. This way, you can prevent the puris from absorbing too much oil.
  • Place the fried puris in a dish lined with tissue paper; this will help absorb excess oil.
  • Take only as much oil as needed. Do not reuse the oil used for frying more than once or twice; oil heated at very high temperatures contains trans fats which are bad for the heart and can cause cancer in the long run.

Is popcorn a weight loss food?

Popcorn as a snack: Healthy hit or dietary horror show? (Jose A. Bernat Bacete/Moment, Getty Images) Popcorn, with its ample dietary fiber and typically low calorie count, makes it easy to understand why many people think a giant bucket at the movie theater qualifies as a healthy snack. But be careful before you start scooping handfuls into your mouth as the opening credits roll; not all popcorn is created equal.

  • When it’s air-popped and lightly seasoned, popcorn is an efficiently healthy snack.
  • That’s because it is a whole grain, and high-fiber whole grains have been linked to a lower risk of heart disease, diabetes, some cancers and other health problems.
  • Federal dietary guidelines say half of all grains consumed should be whole grains, and popcorn packs more fiber per serving than whole-wheat bread.

“When prepared well, popcorn actually is a pretty good snack,” said Maya Vadiveloo, an assistant professor in the department of nutrition and food sciences at the University of Rhode Island. “It’s stable. It’s inexpensive. It’s fairly tasty. For people who might be struggling to eat adequate fruits or vegetables or other whole grains, it’s a low-risk snack to start.

  1. Popcorn at the movies is very different than popcorn made at home.” A tub of movie theater popcorn can contain up to 1,090 calories and 2,650 milligrams of sodium.
  2. Even a small movie theater popcorn has significant calories and is very high in salt,” Vadiveloo said.
  3. Sodium is one of the leading risk factors for hypertension and stroke in general, so it’s something we do care about from a perspective of heart disease.” Some theater chains pop their popcorn in canola oil.

Vadiveloo said popcorn made with measured amounts of heart-healthy oils such as canola or olive oil can still be healthy. But, she said, it’s better to have control over how the snack is prepared from the start.

The same logic goes for popcorn coated in sugar, such as caramel corn, she said.”Air-popped would be a good way to prepare popcorn because it gives you some control over the seasonings that you add afterward – how much salt, or how much oil or butter,” Vadiveloo said.Microwave popcorn may have posed an entirely different set of health problems in the past, but many of the chemicals involved have been removed in recent years.

One such chemical, diacetyl, has been linked to a disease called popcorn lung, which causes shortness of breath and wheezing. Diacetyl, which gives some microwave popcorn its buttery taste, is found in cheese, butter, yogurt and wine, and it’s not harmful if swallowed; the danger comes when it is inhaled in large amounts.

In addition to fiber, popcorn also is a good source of polyphenols, which are antioxidants that have been linked to better blood circulation and digestive health, as well as a potentially lower risk of certain cancers. Another health benefit of popcorn is its high satiety. Because of popcorn’s high fiber content, its low calorie count and its low energy density, popcorn is considered to be a food that can aid in weight loss.

For example, popcorn has been shown to make people feel fuller than a similar calorie amount of potato chips. “I could give you 200 calories of a milkshake, and that might be 5 or 6 ounces,” Vadiveloo said. “Your body isn’t going to recognize you’ve had 200 calories and feel satisfied.
