Chocolate Decadence. Gluten-Free Brown Rice Flour Brownies

When I found this recipe for Chocolate Brownies made with Brown Rice Flour, I had to give it my best shot…in the interests of research!

Ingredients

¾ cup unsalted butter, melted
½ cup pure maple syrup
1 cup dark chocolate chips
3 large eggs
1 tbs pure vanilla extract
1/3 cup brown rice flour
2/3 cup unsweetened cocoa powder
¾ tsp baking soda
1 tsp instant coffee or ground cinnamon

Method

Preheat the oven to 200 degrees C. and lightly oil a 200x200mm baking pan, or line with baking paper.
In a bowl, mix together the brown rice flour, cinnamon or coffee, cocoa powder, baking powder. Set aside.


In a saucepan, melt the butter, the chocolate chips and the maple syrup, stirring constantly. Avoid letting the mixture getting too hot because you’ll want to cool it. Remove the saucepan from the heat and set aside to cool.
Whisk in the vanilla, and then the eggs, one at a time. Whisk until the mixture is thick and glossy.

 

Pour in the dry mixture and mix until just combined.
Pour the batter into the baking pan and bake for 25-35 minutes, until cooked through.
Allow to cool for 15 minutes before cutting and serving.
