Za'atar - Moroccan Spice Blend

A simple recipe for Za’atar


A Middle Eastern spice blend that can be used in a multitude of ways. Za’atar Spice is a blend of savory dried herbs like oregano, marjoram or thyme, and earthy spices like cumin and coriander, with sesame seeds, salt and tangy sumac. 

Use it on Roasted Eggplant, as a rub for chicken, beef, lamb or fish before barbequing or baking.

Try adding a little to Dukkah and serve with olive oil and crusty bread.


1 tablespoon dried thyme - crushed (or substitute oregano or marjoram)
1 tablespoon ground cumin 
1 tablespoon ground coriander
1 tablespoon toasted sesame seeds
1 tablespoon sumac
½ teaspoon kosher salt
¼ teaspoon or more chili flakes- optional



Mix all the ingredients together in a small bowl. Store in an airtight container.
