This Golden Hummus is a quick and easy lunch idea or to whip up when you have unexpected family or friends visiting. It is Delicious served with vegetable crudites, healthy bread and pizzas or whatever takes your fancy!
1 (400g) can chickpeas, rinsed and drained
2 tbsps tahini
2 small cloves of garlic, crushed
1/4 tsp sea/rock salt (to taste)
2 tbsps plain yoghurt (to taste)
1/4 cup extra virgin olive oil
3 tsps lemon juice
1 tsp ground cumin
1/2 tsp maple syrup (to taste)
1 tsp Turmeric Paste
1 tbsp fresh parsley, finely chopped
2 tsps snipped chives
Cayenne pepper (to serve)
Place the first 10 ingredients into a food processor and whiz whilst adding olive oil in a thin stream until smooth. Taste and adjust salt, yoghurt and maple syrup to your liking. Stir through parsley, chives and garnish with a sprinkle of cayenne pepper.
