Turmeric Marinated Pork

If you’re looking for pork fillet or pork spare rib recipes, or another fantastic recipe using Turmeric Paste, here’s a corker for you!
This recipe is adapted from our Haldi Seared Chicken recipe. It’s a beautiful, tried and true marinade that works just as well on pork or chicken. It requires some marinating time to get the best of the flavours, so get the meat marinating and pop it into the fridge. In a couple of hours, you can crank up the barbie or use the stove top for this delicious turmeric infused pork recipe.
Using Turmeric Paste in your favorite recipes is an easy way to get the benefits of turmeric in your daily diet.
1 tbsp Turmeric Paste
2 tbsp macadamia oil
1/4 tsp salt (rock/sea)
1 red chilli, diced (optional)
1 small bunch coriander, roughly chopped
4 large cloves garlic, crushed
2 tsp fresh ginger, finely grated
1 tsp fish sauce
1 tsp pure maple syrup
500g pork fillets or 1 to 11/2 kg pork spare ribs
1 tbsp virgin coconut oil
Freshly ground black pepper (to taste)
Place the first 9 ingredients in a glass dish and stir to combine. Add pork and massage well with your hands to obtain a thorough coating. Cover and place in the refrigerator for 2 hours or overnight.
Heat a heavy based fry pan over medium heat, (or heat barbeque grill to medium) and add the coconut oil (reduce heat if required to prevent oil smoking). Cook pork over a medium heat until golden in colour and cooked through, turning so that all sides are seared. Transfer to a serving plate, sprinkle with pepper and cover with foil to keep warm until ready to serve.
Serve with a salad of fresh greens and an array of brightly coloured vegetables.
