Besan and Vegetable Balls in Tomato Sauce

Made with veggies and gluten-free besan (chickpea) flour, this dish is gorgeous!



Tomato Sauce

15 medium tomatoes
2 tablespoons oil of your choice
1 teaspoon grated fresh ginger
2 dried chillis, crushed
1 teaspoon organic ground cumin
½ teaspoon organic ground turmeric or 1 teaspoon turmeric paste
1 ½ teaspoons salt


Vegetable Balls

5 medium-sized potatoes, peeled and washed
½ cauliflower, washed, trimmed and broken into flowerets
1 cup PFE besan flour (Chickpea)
3 tablespoons of chopped fresh coriander (or parsley)
1 teaspoon grated fresh ginger
1 teaspoon organic ground turmeric
1 teaspoon PFE organic garam masala
½ teaspoon PFE organic ground black pepper
1 ½ teaspoons salt
Rice bran oil for deep frying



Tomato Sauce

  1. Drop the whole tomatoes into a pot of boiling water for 20 seconds or so.
  2. Drain, rinse under cold water, peel and crush. You can cheat and use canned crushed tomatoes! But if tomatoes are in season and cheap, fresh is best.
  3. Heat the oil over medium heat in heavy based pan.
  4. Fry the ginger for a few seconds, add the dried chillis, then the cumin, and the turmeric. Stir for a few seconds, then add the tomatoes and salt.
  5. Stir, lower heat and cook covered for 20 minutes, stirring every 5 minutes or so.


Vegetable Balls


  1. Grate the potatoes and the cauliflower through the large holes in a grater.
  2. Combine vegetables with the besan flour, chopped coriander, ginger, turmeric, garam masala, black pepper and salt.
  3. Mix thoroughly and knead for a couple of minutes. The grated potatoes should have enough moisture to bind the ingredients together.
  4. Form the mixture into small balls (about 25).
  5. Heat the rice bran oil until almost smoking, and drop in the vegetable balls.
  6. Deep fry for 5-8 minutes until golden brown and crispy.
  7. Remove and drain.


Serve vegetable balls topped with tomato sauce, topped with coriander for garnish. Serve with rice or a flat bread, or on its own.


NB: The vegetable balls will soften in the hot sauce. Serve promptly, or keep separate.
