Mango Jam

A great way to use the end of season mangoes and keep the flavour of mango available in your fridge for a few months more. Don't forget to freeze a box of two for winter smoothies, desserts and just about anything you can think of.
Ingredients
500g diced onion
30g crushed garlic
25g crushed ginger
40ml sesame oil
1/2 tsp cinnamon
1 1/2 tsp fenugreek
2 whole star anise
2 cloves
1/2 tsp chilli paste
1/4 cup tamarind pulp
1 tsp sea salt
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp turmeric
1/2 tsp pepper
500g mango cubes
250g palm sugar
125ml white vinegar
125ml water
Method
Cook onions, garlic, ginger and the sesame oil over a gentle heat for about 5 minutes (until soft and slightly browned). Add spices and cook for a another minute stirring continuously. Add remaining ingredients, reduce heat to low and simmer for 1 hour. Cool and store in sterilised glass jar.
This will last for a few months in the fridge.
