Bengali Broccoli with dal and Fenugreek

A simple and tasty vegan recipe featuring the fenugreek spice



2 cup Broccoli florets(steamed)
1/2 cup Channa dal (soaked and cooked not mushed)
1/4 cup Fenugreek Seeds (soaked about 2-3 hours)
1 big Onion finely chopped
3-4 cloves garlic finely chopped
2-3 tbsp olive oil
Salt to taste
1/2 tsp turmeric powder
1/4 tsp chilli powder
2 tsp coriander powder
2 tsp cumin powder
1/4 tsp garam masala



Soak the fenugreek seeds in enough water to cover. Prepare and cook your channa dal, drain and set aside. Steam your broccoli and set aside. Gather and blend the spices (masala). 


Now, heat the oil in a heavy bottom pan. Add the onion and fry for a few minutes until softened.  Add the garlic and let it brown.  Now add the steamed broccoli and cook for about 3-4 minutes. Add drained channa dal and fenugreek seeds and mix well.  Now add salt and all the masala and mix well. Cook for a further for 5-6 minutes on a medium heat.  Serve hot with roti or naan.
