Aromatic Fluffy Rice

Ingredients

2 cups basmati rice
3 cups water, preferably filtered
1/4 tsp fine rock/sea salt
5 green cardamom pods, bruised
1/2 tsp garam masala
3 fresh curry leaves (optional)
2 tsps butter

 

To Make

Rinse rice in a large seive until water runs clear. Bring the water to a boil in a saucepan. Place drained rice, salt, cardamom pods, garam masala and curry leaves into saucepan and stir well. Bring back to the boil, cover with a lid and simmer over a low heat for 17 minutes or until water is absorbed. Remove from heat, add butter and "fluff" gently with a fork. Immediately replace lid and stand for 5-10 minutes prior to serving with your favourite dish.
