Cool Cucumber Raita

Raitas are made of either cooked or raw veggies or fresh fruits combined with spiced yoghurt. They’re a traditional Indian side dish that add contrast to spicy hot dishes. A fresh, cooling raita is the best accompaniment to reach for if the chilli is too hot. This raita is simple to whip up, and is a great accompaniment to our Goat Curry, Kitchari and Biryani recipes.

1½ tsp ground Cumin
2 medium-sized Cucumbers
1 ¼ cups (300ml) plain Yoghurt
½ tsp Garam Masala
½ tsp Salt
¼ tsp ground Black Pepper

1. Peel the cucumbers, cut in half lengthways and remove the seeds with a spoon. Cut each half into thin strips and chop into small pieces. Squeeze out any liquid. Dry on paper towel.
2. Add ground cumin, garam masala, salt and pepper to the yoghurt. Adjust to taste.
3. Add the cucumber and stir. If you have some whole cumin seeds, dry roast them and sprinkle over the top.
Easy peasy and delish!
